Unlike fermenting for fermenting period when lid should be left loose for storage is better to close the lid tight. This will limit air access and increase the storage period.

In my opinion, homemade milk kefir stored in the fridge for seven days or longer reduces in taste significantly. After certain point kefir develops a tart taste which is undesirable on my taste.

In milk kefir, many micro grains remain present, and at a slower rate continue fermentation. And besides it, the kefir becomes sourer over time up until it develop tart taste.
