Milk kefir fermentation time 16-26 hours*. The best indicator of milk kefir fermentation completeness is when the whey bubble appears at the bottom of the jar. That indicates milk kefir fermentation completed on the volume of the milk and milk kefir is ready to be consumed. 

How long time it takes for milk kefir fermentation depends largely on milk to grains ratio and on the ambient temperature. 

*Generally, the rule is the higher ratio of milk kefir grains to milk and higher temperature make the fermentation process faster. But as for consumption purposes you don’t want to speed up the fermentation process. Ideally to balance frains to milk ratio and ambient temperature so full fermentation process takes around 24 hours.
